Chef Paulo Machado to showcase Pantanal cuisine at İzmir GastroFest

Chef and researcher Paulo Machado will represent the gastronomy of Mato Grosso do Sul, Brazil, at the 9th edition of İzmir GastroFest in Turkey. Held under the theme “Food and Memory,” the festival explores traditions and recipes passed down through generations.

Machado will present “macarrão de comitiva,” a traditional pasta dish from the Pantanal region associated with the routines of cattle drives. He learned the recipe from Helinho da Comitiva in Campo Grande and aims to demonstrate how food preserves the identity and history of a territory. Additionally, Machado will showcase dulce de leche from the Recanto Ecológico Rio da Prata, produced in the municipality of Jardim, for which he serves as an ambassador.
