Chef Rubén Urbano to compete in International Medieval Tapas Championship

Chef Rubén Urbano will represent Sigüenza in the 2026 International Medieval Pinchos and Tapas Championship. The competition, held in Valencia de Alcántara, brings together representatives from medieval towns across Spain and Portugal.

Urbano, the chef at El Fogaril Gastrobar, enters the contest after winning the Sigüenza Memorial Santos García Verdes competition for two consecutive years. His entry, titled ‘Evolución’, is designed to reflect the cultural coexistence of the Middle Ages. The dish features a combination of almond and chickpea cream, spiced eggplant, pomegranate reduction, sour apple cream, honey-caramelized lamb from La Alcarria, and figs macerated in mead.
