Chef Samuel Naveira Teams Up with Jaime Pesaque for Event in Lima

Chef Samuel Naveira, head chef of the Spanish restaurant MUNA, traveled to Lima, Peru, to cook at the restaurant Sapiens alongside renowned Peruvian chef Jaime Pesaque. The culinary showcase was organized by Fagor Professional, a major hospitality and food‑service equipment company, and brought together leading prescribers from the sector across the country.

The menu featured a series of inventive dishes, including croquetas de cecina with Amazonian chutney, anticuchitos of guanciale, grilled conchas with citrus honey, foie‑filled gyoza, smoked‑tomato tartare, a corvina mosaic with huachana foam, and desserts such as melon‑watermelon chamoy and a tiramisu made with coffee, lúcuma ice cream and cocoa cream. Both chefs also served as speakers, discussing strategy, innovation and gastronomy trends that are expected to influence the hospitality industry throughout Latin America. During his visit, Naveira met with the teams of celebrated chefs Virgilio Martínez, Pía León, Gastón Acurio and Mitsuharu Tsumura, further enriching the cultural exchange and promising to inform his future menus at MUNA in Spain.
