Chef Tom Kerridge spotlights £3.75 truffle butter and crispy chilli oil as essential kitchen staples
In the third episode of the ITV series Tom Kerridge Cooks Italy, the chef joins third‑generation truffle hunter Alessandro in Umbria to source prized black truffles. Using Marks & Spencer’s Collection Truffle Butter (£3.75 per 100 g) and Parmigiano Reggiano, Kerridge prepares a rich Truffle Mac & Cheese, and later showcases flat‑leaf parsley from the same retailer for a baked cod dish.
Separately, Kerridge told The Guardian that his favourite all‑purpose condiment is a crunchy chilli oil. He keeps multiple jars on hand, using the oil as a finishing touch on dishes ranging from omelettes and pasta to cauliflower cheese, brie and cold meats. He notes a black‑bean variant is also available. The chef mentioned that his health overhaul after becoming a father led him to adopt these flavour‑forward ingredients while maintaining his signature comfort‑food style.
