Chefs Chele González and Aitor Zabala host culinary collaboration in Manila
Spanish chefs Chele González and Aitor Zabala recently held a collaborative culinary event at Gallery by Chele in Manila. The collaboration brought together influences from Manila, Los Angeles, and the techniques learned at the renowned El Bullí.
During the event, Zabala, who currently operates in Los Angeles, presented adapted versions of his iconic dishes, such as a colorful Margherita pizza and local quail used in place of traditional Iberian pork. González presented a menu he describes as ‘anthropological,’ featuring items like white gazpacho and black octopus that blend Spanish techniques with local Filipino ingredients.
Both chefs cited the legacy of El Bullí as a fundamental influence on their professional methods and work ethic. The event highlighted their respective international trajectories and their ability to integrate diverse regional influences into a unique culinary language while working far from their native Spain.
