Chez Sophie wins Foodish competition in Biella

In the latest episode of the TV8 program ‘Foodish’, host Joe Bastianich and guest Massimo Giletti traveled to Biella to search for the best Piedmontese braised beef (brasato). Four restaurants competed in a direct elimination duel: Osteria 1992, VI. BO, Ambrosia, and Chez Sophie.

While most contestants prepared the dish using ‘cappello del prete’, the traditional cut for Piedmontese braised beef, Chez Sophie won the competition by serving beef cheek (guancia di manzo).

During the episode, Massimo Giletti reflected on his family roots in the Biella region, noting his great-grandfather founded a historic textile mill there in 1884. Giletti also brought an antique fork belonging to his great-grandmother to test the tenderness of the meat.
