Chianina cattle production defines traditional Florentine steak
The Florentine steak, or bistecca alla fiorentina, is traditionally produced using the Chianina breed of cattle, which is native to the Valdichiana region of Tuscany. This ancient breed, which dates back to the Etruscan era, is known for its large size and meat quality.
Farmers in the Tuscan countryside typically raise these cattle on small, family-owned farms using sustainable practices. The cattle graze freely on natural grasses and herbs, and are raised without the use of growth hormones or unnecessary antibiotics. The animals are allowed to mature slowly, often reaching two to three years of age before processing.
While the Chianina breed, officially named the White Central Apennine Steer PGI, faced the threat of extinction during the 20th century, local farmers and breed associations have worked to preserve the breed as a part of Tuscan culinary heritage.
