Chocolate industry pivots to alternative ingredients and AI

Facing cocoa‑supply uncertainty, price volatility, sustainability demands and health‑focused consumer trends, major chocolate makers are accelerating research into non‑cocoa raw materials. Companies such as Mars, Nestlé, Lindt & Sprüngli and Barry Callebaut are developing fermented, plant‑based substitutes (e.g., lupin, oat, sunflower‑seed, grape‑seed) and up‑cycling waste streams like grape pomace and cocoa husk to create chocolate‑like products that can be processed on existing lines.

Artificial intelligence is also being deployed to speed formulation, optimise recipe design, improve visual quality inspection and enable predictive manufacturing. AI‑driven data analysis shortens development cycles, reduces costs and supports the creation of lower‑sugar or alternative‑fat chocolate that retains the familiar taste and texture.
