CNR researchers find way to boost vitamin B9 in leafy vegetables using light

Researchers at the National Research Council (CNR) Institute of Food Production Sciences in Bari and Lecce have developed a sustainable method to enhance the nutritional value of leafy vegetables. By managing light intensity during the growth phase of young leaves and petioles, the study found that vitamin B9 (folate) accumulation can be significantly increased.

The research, published in the journal Scientia Horticulturae, focused on species such as mizuna, chicory, and tatsoi. Quantitative findings indicate that a 100-gram serving of mizuna or tatsoi grown under these optimized light conditions provides approximately 45% of the recommended daily folate intake for adults and 30% for pregnant individuals.

In addition to increasing vitamin B9, the modulated light exposure resulted in a notable reduction of nitrate concentrations within the leaves. This dual effect improves the nutritional profile of the produce without negatively impacting crop productivity.
