Coffee brewing methods impact cholesterol levels
Research indicates that coffee brewing methods significantly influence heart health by affecting cholesterol levels. The primary concern involves two diterpenes, cafestol and kahweol, which are natural compounds in coffee beans that can increase LDL (bad) cholesterol by affecting how the liver processes it.
Paper filters are highly effective at trapping these oily compounds while allowing caffeine to pass through. In contrast, methods such as French press, boiled coffee, Turkish/Greek coffee, and espresso leave more of these oils in the beverage. A 2025 Swedish study found that automatic office coffee machines produced significantly higher concentrations of diterpenes, averaging 176 mg/L of cafestol, compared to just 12 mg/L in home-brewed coffee using paper filters.
For individuals monitoring their cholesterol, paper-filtered coffee or instant coffee are considered more heart-friendly options. While moderate coffee consumption (up to 400 mg of caffeine daily) is generally associated with reduced cardiovascular risk, the impact of unfiltered coffee depends on an individual's frequency of consumption and overall cardiovascular profile.
