Viterbo's Contrasto Restaurant Showcases Sea‑Focused Menu

Contrasto, a restaurant in Viterbo's historic centre, opened in 2019 after the renovation of a forty‑year‑old fruit shop. Founder Tiziano Li Volti, a former Roman restaurateur, created the venue to blend tradition with modernity, offering a menu where roughly 80 % of the dishes centre on seafood, such as crustacean risotto and seared tuna, alongside a curated wine list featuring Champagne and reds.

The concept of “contrast” is reflected in the building’s stone walls and contemporary furnishings, positioning Contrasto as a new culinary landmark in the Tuscia region. The eatery has earned recognition in guidebooks and maintains a strong local clientele, highlighting a shift toward upscale marine cuisine in a city previously known for more traditional fare.
