Cooking techniques and frying pan performance tested
Cooking science and kitchenware performance are highlighted in recent culinary assessments. Achieving creamy scrambled eggs depends heavily on heat management. High heat causes egg proteins to contract rapidly, squeezing out water and resulting in a rubbery or watery texture. Conversely, using low to medium heat allows proteins like ovotransferrin and ovalbumin to form a loose network that retains moisture. For food safety, eggs should reach at least 70 °C for two minutes to ensure all liquid mass is cooked.
In a separate test of non-stick frying pans, the Fissler Adamant Premium emerged as the top performer among brands including WMF, Silit, and Zwilling. The Fissler model was noted for its robust silicon carbide coating, which resists scratches even when using metal utensils. It also demonstrated high heat conductivity and thermal retention, maintaining temperature effectively after being removed from the heat source. While highly rated for even heat distribution and durability, it carries a higher price point than competing models.
