Cooking tips for beans and traditional Zagorje štrukli recipes

Common culinary challenges and traditional recipes are highlighted, specifically regarding the preparation of beans and Zagorje štrukli.

To prevent beans from remaining hard after hours of boiling, avoid adding acidic ingredients such as tomatoes, tomato concentrate, or vinegar too early in the process. Acid can slow the softening of the bean's cell walls. It is recommended to cook the beans until they are nearly soft before adding acidic components. Additionally, old beans stored in warm, humid conditions may resist softening regardless of cooking time.

For preparing traditional Zagorje štrukli with cheese, a dough made from smooth and sharp flour, oil, salt, and egg is prepared and rested. The filling consists of fresh cow cheese, eggs, and sharp flour. The dough is stretched thin, filled, folded, and boiled in water containing vinegar, oil, and salt. Once they float, the štrukli are transferred to a heatproof dish, topped with cream, and baked at 180°C for approximately 35 minutes until golden.
