Cooking tips for preparing dried legumes

Preparation of dried legumes, such as broad beans, peas, soybeans, and sweet lupins, involves specific steps to ensure proper texture and safety. For whole dried varieties, soaking in water for eight to twelve hours is recommended to allow the seeds to swell and reduce subsequent cooking times. Soaking and heating also help reduce or inactivate certain natural plant substances that can be undesirable when consumed raw.

Contrary to common kitchen myths, salt can be added to the cooking water from the beginning, as it does not prevent legumes from softening. However, acidic ingredients like vinegar, lemon juice, or tomatoes should be added only after the legumes have softened, as acidity can slow down the cooking process.
