Copenhagen food critic criticizes rise of restaurant chains

Adam Haugsted, a food critic with nearly 250,000 followers on his Instagram profile 'The Food Fetishist', has criticized the growing trend of restaurant chains and large food corporations in Copenhagen. Haugsted argues that many establishments which began as original, high-quality concepts have lost their unique charm and consistency as they expand into larger chains.

Specifically citing Gasoline Grill and Hart Bakery as examples, Haugsted noted that while Hart Bakery was once considered the city's best bakery, its quality has become inconsistent across its seven locations. Klaus Vittrup, the founder of Gasoline Grill, defended the brand, stating that they continue to prepare fresh food from high-quality ingredients daily and that a single experience does not necessarily indicate a general decline in quality.
