Corn cooking methods improve flavor and texture
Two culinary guides explain how to keep corn kernels sweet and tender. One technique, demonstrated by farmer Džen Kaningem, recommends boiling fresh ears for four to five minutes and then briefly rinsing them under cold tap water to stop the cooking process, preserving crispness and natural sugars.
Another method adds milk and butter to the boiling water, cooking the corn for about ten minutes. The butter helps retain moisture while the milk enhances the corn's natural sweetness, resulting in softer, juicier kernels. Both guides note that overcooking turns the grains starchy and reduces flavor.
