Costco grinds Kirkland Signature ground beef in-store

Costco prepares its Kirkland Signature ground beef in-store, according to reports from employees. The process typically involves grinding a combination of beef trimmings and extremely lean bull meat to achieve a final product that generally falls within an 88% lean and 12% fat ratio.

In some instances, the retailer produces a ‘regrind’ using leftover steaks that are nearing their sell-by date, such as wagyu chuck or prime tri-tip. These regrind products are marked with a small ‘R’ above the expiration date on the sticker and must be sold by 4 p.m. to ensure they maintain the required lean threshold.
