Cuirone hosts Maial Festival celebrating pork traditions

The Maial Festival in Cuirone, Vergiate, celebrates pork specialties during the first weekend of September. Established in 2013, the event aims to highlight pork ribs, a cut once considered “poor” but now central to the festivities.

Organized by the Compagnia Italiana dei Mai, the festival features a ten-meter grill fueled by beech wood. The ribs are prepared using a secret sauce kept confidential by the organizers. In addition to the grilled ribs, the event features rustisciada, a traditional pork stew made with loin and sausage cooked with white onions and carrots.
