Culinary experts share techniques for efficient broth preparation

Traditional methods for preparing broth often involve simmering meat and vegetables for several hours to achieve clarity and flavor. Key ingredients typically include poultry and beef combined with vegetables such as carrots, parsley root, celery, leeks, and onions. To ensure a clear broth, it is recommended to skim off impurities (scum) during the initial boiling phase and add salt only at the end of the process.

However, renowned chef Ferran Adrià challenges the necessity of long cooking times. In his book ‘La comida de la familia’, Adrià suggests that intense flavor is a result of ingredient proportions rather than duration. He argues that excessive boiling can lead to simple water evaporation rather than essence extraction.

According to Adrià, a deep flavor can be achieved in just 30 minutes by increasing the ratio of meat and vegetables to water. His recommended recipe uses three cleaned chicken carcasses with 130 grams of onion, 80 grams of carrot, and 40 grams of celery for 5 liters of cold water. Chef Ricard Camarena supports this philosophy, emphasizing that the quality and volume of products are the true foundations of a good broth.
