Culinary experts share tips for summer grilling and heat management

Culinary experts and chefs suggest various methods and ingredients to optimize summer grilling. For achieving a perfect sear and preventing food from sticking, the choice of cooking fat is critical.

Grapeseed oil is highly recommended by experts like Rob Rainford and Klementine Song due to its high smoke point of 420°F and neutral flavor. While extra virgin olive oil has a lower smoke point, refined or light olive oil can reach up to 470°F. Other preferred options include coconut oil, beef tallow, and butter, which can add richer flavors to dishes.

Effective grilling also relies on heat management. Using distinct heat zones—one for quick browning and another for gentle finishing—allows for better control over different types of proteins and vegetables. Recommended recipes utilizing these techniques include Greek lemon chicken skewers, cumin-lime flank steak tacos, and various vegetarian options like miso maple tofu planks.
