Culinary methods for reviving stale bread and making breadcrumbs

Culinary techniques for repurposing stale bread and creating optimal breadcrumbs are highlighted. To revive stale rolls, one can briefly run them under tap water to moisten the crust and then bake them in an oven. This process addresses starch retrogradation, allowing the starch to reabsorb moisture and restore a soft interior and crispy exterior.

For making breadcrumbs, a mixture of homemade breadcrumbs from dried wheat rolls, panko, and a small amount of potato starch is recommended. This combination creates a lighter, crunchier coating that absorbs less fat during frying. Using irregular crumbs rather than fine powder provides better texture for dishes like pork cutlets.
