Culinary techniques for achieving the perfect fried egg

Culinary experts and modern kitchen technology offer different approaches to achieving the perfect fried egg, characterized by crispy edges and a liquid or creamy yolk.

Professional chefs such as José Andrés, Dabiz Muñoz, and Juanjo López emphasize precise heat control. To achieve a crispy edge without overcooking the yolk, chefs suggest letting the bottom brown first before lightly pouring hot oil over the top. Juanjo López recommends straining the egg through a sieve beforehand to remove excess liquid from the white, creating a more compact texture. José Andrés advocates for using abundant hot oil to allow the egg white to puff up like a souffle.

Alternatively, an air fryer can be used as a healthier method to achieve crispy edges without extra oil. By preheating the basket to 132°C (270°F) and using a small amount of non-stick spray, the circulating dry heat caramelizes the edges. For a liquid yolk, a cooking time of approximately five minutes is suggested, while slightly longer times result in a creamier texture.
