Culinary techniques for apple pie filling
Chef Stella Parks, featured on the recipe platform Serious Eats, has introduced a method for making apple pie filling that avoids the time-consuming step of pre-cooking apples in a pan.
Traditional recipes often require cooking sliced apples beforehand to prevent them from releasing too much liquid and making the crust soggy. Parks suggests using a maceration technique instead. By letting the apples sit in sugar, the fruit's cellular structure breaks down naturally, releasing excess moisture without the need for heat. This process ensures a thick, saucy filling while maintaining the texture of the fruit and protecting the integrity of the pie crust.
