To achieve the correct soft and chewy consistency, the mixture should reach a temperature between 118 and 120 degrees Celsius while being stirred occasionally for 35 to 45 minutes.
Regarding food preservation, chef Dean Harper advises against storing eggs in the refrigerator door due to frequent temperature fluctuations. Instead, eggs should be kept on the middle shelf where the temperature remains stable between three and five degrees Celsius.
