Culinary tips for roasting meat and peeling peppers

Various culinary techniques can simplify food preparation and improve texture. To ensure meat remains soft and juicy after roasting, applying a marinade of yogurt and mustard can be effective. The acidity in yogurt helps soften the surface proteins, while mustard aids in even seasoning and crust formation. It is recommended to dry the meat thoroughly before applying the mixture and to use only a thin layer to prevent excess moisture from steaming the meat instead of creating a crust.

For roasted peppers, the difficulty of peeling can be mitigated by using steam. After roasting peppers at approximately 220 degrees Celsius until the skin blisters, they should be immediately placed in a covered pot or a sealed bag for 10 to 15 minutes. This trapped steam softens the skin, allowing it to be easily removed by hand. Avoiding cold water rinsing is advised to prevent the loss of juice and flavor.
