Culinary traditions of rice in Asturias and Valencia
In Asturias, rice is primarily served as a dessert, most notably in the form of creamy rice with milk, sugar, cinnamon, and lemon. This traditional recipe is so significant to the region that the town of Cabranes hosts a dedicated festival recognized as a matter of tourist interest for the Principality.
In contrast, rice serves as the main course in Valencia, where it is used to prepare paellas, dry rice dishes, and various broth-based preparations. While Asturias focuses on sweet, slow-cooked recipes, Valencian cuisine utilizes rice alongside sofrito and local land or sea products to anchor the meal.
