To prevent apple tarts from having soggy or overly puffed pastry, Lignac recommends pre-baking puff pastry between two baking sheets at 190°C for 10 minutes. This method uses constant pressure to ensure a flat, even, and crispy base that can better withstand fruit toppings.
Additionally, Lignac has introduced a variation for chocolate fondant by replacing butter entirely with mascarpone. This substitution creates a dense, truffle-like texture that remains moist and shiny. The recipe utilizes the fat and moisture content of the cheese combined with dark chocolate to achieve a creamy consistency without traditional butter-based methods.
