Czech food businesses adapt to rising costs and market shifts
Czech gastronomy businesses are navigating different strategies to combat rising operational costs and changing consumer habits.
Wildcook, led by Michal Pitek, is discontinuing its regular lunch bistro service as of September 25. Pitek cited rising labor, raw material, and energy costs, noting that lunch menus priced at 150–170 CZK are becoming economically unviable. Additionally, competition from large-scale producers of low-cost ready meals has impacted the market. Wildcook will pivot its focus toward catering, tasting dinners, and private or corporate events.
In contrast, Kristián Kendra’s business, Dobroty od Kristiána in Turnov, maintains a model centered on affordability. By offering main courses for approximately 100 CZK, Kendra relies on a high-efficiency system with minimal waste, a limited menu, and no traditional restaurant service. This model requires significant personal labor, with Kendra often working from 2:00 AM until late evening to maintain low margins and high volume.
