Daniele Persegani prepares Anthony Bourdain-inspired onion soup

On the television program ‘E' sempre mezzogiorno’ on October 7, 2026, chef Daniele Persegani prepared a recipe for onion soup inspired by Anthony Bourdain.

The dish is a reinterpretation of a classic French preparation. The recipe involves slowly cooking sliced white onions in butter until they are soft and creamy, then adding ingredients such as Port wine, balsamic vinegar, chicken broth, pancetta, and aromatic herbs. The soup is cooked for approximately two and a half hours before being portioned into cocottes, topped with Gruyère cheese, and gratinated in the oven. It is served hot with toasted bread.
