Danish Vegetarian Association appoints Katrine Ejlerskov as health chief
The Danish Vegetarian Association (Dansk Vegetarisk Forening) has appointed Katrine Ejlerskov as its new health chief. Ejlerskov holds a PhD in human nutrition and previously served as a center manager at the Plant-based Knowledge Center.
In her new role, Ejlerskov aims to combat misinformation regarding plant-based diets and nutrition. She intends to strengthen the association's nutritional efforts by engaging with health spokespeople, municipal actors, and pension companies to encourage plant-rich eating habits. She noted that current dietary habits in Denmark remain far from official nutritional recommendations and expressed a desire to connect healthy eating with enjoyment and taste.
