Denmark's Lemon‑Vanilla Koldskål and Austria's Lemon Schnitzel Trend
A cold, lemon‑flavored vanilla soup called koldskål is a traditional Danish summer dessert. It is made from yogurt, buttermilk, egg yolks, sugar, vanilla and fresh lemon juice, and can be prepared in about fifteen minutes. The dish is usually served chilled with crisp Danish biscuits (kammerjunker) or other crunchy toppings.
In Austrian cuisine, lemon wedges are commonly served with Wiener schnitzel. The acidity of the lemon cuts through the richness of the fried meat, brightening the flavor and helping to balance the fat.
