Diabetes rates rise globally as doctors warn of high-starch vegetables

Global diabetes rates are rising significantly, with the International Diabetes Federation (IDF) reporting that over 537 million adults currently live with the condition, a figure projected to reach 783 million. Diabetes-related complications, including end-stage renal failure, stroke, and myocardial infarction, contribute to more than 6.7 million deaths annually.

Medical experts warn that certain vegetables can inadvertently spike blood sugar levels due to high hidden carbohydrate and starch content. Dr. Fan Hui, Head of Endocrinology at Chaoyang Hospital in Beijing, notes that consuming these vegetables in excess can cause sudden glucose surges, increasing blood viscosity and accelerating vascular complications.

One specific example is taro, which contains a high density of starch. When consumed alongside white rice, it can overload the pancreas and cause rapid post-meal blood sugar spikes.
