Dietary carbohydrates and their impact on blood glucose levels
Common foods like bread can significantly impact blood glucose levels, even if they do not taste sweet. Carbohydrates in bread are broken down into glucose, which enters the bloodstream and triggers the pancreas to release insulin.
Refined white flour typically causes a faster spike in blood sugar compared to high-fiber options. Fiber plays a crucial role by slowing digestion and the absorption of carbohydrates, leading to a more gradual glycemic response. Other foods that influence glucose levels include rice, pasta, potatoes, and cereals.
To manage glycemic responses, it is recommended not to consume carbohydrates in isolation. Pairing carbohydrates with proteins, healthy fats, or fiber—such as yogurt, cheese, fish, lean meat, avocado, or vegetables—can slow gastric emptying and reduce rapid blood sugar increases. Portion size and the quality of carbohydrates are also key factors in maintaining stable glucose levels.
