Dietary experiment shows impact of ultra-processed foods
A nutritional experiment involving monozygotic twins, Amy and Nancy Kingston, has highlighted the physiological differences between consuming ultra-processed foods versus minimally processed, home-cooked meals. Conducted under the supervision of experts from King’s College London for a BBC Panorama program and as part of the TwinsUK research project, the study controlled for caloric intake, macronutrients, and fiber.
After two weeks, the results showed significant divergence. Amy, who consumed ultra-processed foods, gained nearly one kilogram and experienced increased blood sugar and fat levels, alongside headaches and hunger. Conversely, Nancy, who ate fresh, home-prepared meals, lost weight and maintained stable cholesterol and glucose levels. Findings from the study were also noted by McGill University.
