Rice and potato consumption: Nutritional impact and safety

Health experts and nutritionists are providing guidance on the nutritional impact and safety of consuming rice and potatoes, particularly for individuals managing blood glucose levels.

Regarding blood sugar, the American Diabetes Association suggests that rather than eliminating starches, individuals should focus on portion control and meal composition. Combining carbohydrates with proteins, healthy fats, and non-starchy vegetables can mitigate glucose spikes. Nutritionists note that whole grains, such as brown rice, offer more fiber and nutrients compared to refined white rice, which can lead to faster glucose absorption.

In terms of food safety, specialists warn that cooked rice requires strict storage protocols. To prevent foodborne illness, particularly for high-risk groups like children and pregnant women, cooked rice should not be refrigerated for more than 24 hours. Using a freezer is suggested as a safer alternative for longer storage, though it may alter the texture and flavor of the grain.
