Dietary habits and food sequencing influence blood glucose levels

Recent research and nutritional studies highlight how specific dietary choices and food sequencing can influence blood glucose levels.

White beans are noted for their ability to assist in glycemic management due to their high fiber content. Soluble fibers create a gel in the digestive tract, slowing digestion and the absorption of carbohydrates. While often described as foods that ‘eat’ sugar, experts clarify that they do not eliminate all sugar from the body but rather contribute to more stable glucose levels when part of a balanced diet.

Additionally, studies from Kyoto University suggest that the order of food consumption plays a role in post-meal glucose spikes. In experiments involving mice, consuming olive oil 15 minutes before glucose resulted in significantly lower blood sugar levels compared to consuming glucose first. This effect is attributed to slower stomach emptying and increased levels of hormones involved in glucose regulation, such as glucagon, GIP, and GLP-1. Researchers believe these findings may eventually translate to human dietary practices.
