Dietary shift to sweet potatoes helps manage type 2 diabetes
A 55-year-old man in Beijing, China, successfully managed his type 2 diabetes symptoms and improved blood sugar levels over a five-month period by replacing refined white rice with steamed or boiled sweet potatoes.
During a follow-up examination, his fasting blood glucose levels dropped from 8.9 mmol/L to 6.7 mmol/L, while his post-meal glucose levels decreased from 11 mmol/L to 8 mmol/L. He also experienced a weight loss of 4kg and a reduction in fatigue.
Nutrition experts from Beijing United Medical University Hospital noted that sweet potatoes serve as an effective substitute for refined starch due to their high fiber content and complex carbohydrates. The fiber acts as a buffer to slow sugar absorption, a mechanism supported by research from the Harvard T.H. Chan School of Public Health, which indicates that high-fiber diets can reduce post-meal blood glucose spikes by approximately 12%.
