Dominik Hartmann named GaultMillau Chef of the Year 2027

Dominik Hartmann, chef of the restaurant ‘Magdalena’ in Rickenbach, Switzerland, has been named GaultMillau’s ‘Chef of the Year 2027’. This marks the first time in the history of the Swiss guide that a chef specializing exclusively in vegetarian cuisine has received this title.

Hartmann, who also holds two Michelin stars, transitioned his kitchen to a fully vegetarian menu in 2022. GaultMillau head Urs Heller described his culinary style as ‘Vegi 2.0’, noting that the vegetable-based cuisine is ‘joyful and full of surprises’. The restaurant, co-founded by Hartmann alongside friends Marco Appert and Adriana Hartmann, holds an 18-point rating.

The 2027 GaultMillau Guide also recognized seven chefs with the highest rating of 19 points, including Tanja Grandits, Peter Knogl, and Andreas Caminada. The new guide features 870 restaurants, including 84 new additions.
