Ebizo restaurant promotes Lake Ogawara whitefish in Aomori

The restaurant Ebizo, located in Tohoku Town, Aomori Prefecture, has gained attention for its specialized use of whitefish (shira-uo) sourced from Lake Ogawara, one of Japan’s premier whitefish regions.

The establishment’s owner, who previously served as a head chef at a renowned sukiyaki restaurant in Yokohama, utilizes his culinary expertise to prepare local ingredients. In addition to a highly-regarded katsudon, the restaurant offers whitefish dishes such as individual tempura and sashimi.

Beyond culinary service, the owner is noted for his efforts to increase the recognition and marketability of Lake Ogawara’s whitefish, expressing a long-term goal to see the species reintroduced to areas like Tokyo’s Sumida River.
