Egg consumption safety and healthy cooking techniques
Experts are highlighting both nutritional and safety considerations regarding egg preparation. To reduce caloric intake, nutritionist Mónica Achay suggests cooking eggs in water without oil to mimic the texture of fried eggs, providing a healthier alternative for weight management.
Regarding food safety, pharmacist and communicator Boticaria García warns that consuming undercooked eggs, such as those with runny yolks, requires strict adherence to thermal treatment standards to prevent Salmonella infections. According to Spanish regulations implemented in 2022, fresh eggs can be served if the center reaches 70°C for two seconds, or 63°C for 20 seconds for fried eggs and omelets, provided they are consumed immediately. Proper temperature control and hygiene are essential to protect vulnerable groups, including children, the elderly, and pregnant women, from foodborne illnesses.
