Egg cooking techniques: boiling tips and viral frambled eggs

Recent culinary trends and techniques highlight efficient ways to prepare eggs. One method focuses on easier peeling by adding eggs directly to boiling water rather than starting in cold water. This process causes the outer proteins of the egg white to coagulate quickly, preventing them from adhering to the membrane under the shell. Using a spoon to lower eggs into the water helps prevent cracking against the bottom of the pot.

Another viral trend involves ‘frambled eggs,’ a hybrid technique combining fried and scrambled methods. Instead of whisking eggs in a bowl, they are cracked directly into a hot pan. The whites are allowed to set while the yolks remain intact; once the whites are nearly cooked, the yolks are broken to mix with the whites. This creates a texture that offers the structure of a fried egg with the creaminess of a scramble.
