Egg cooking techniques for perfect texture and color

Cooking eggs correctly involves managing temperature and timing to achieve desired textures and avoid discoloration. A green or grey-green ring that forms around the yolk of a hard-boiled egg is a chemical reaction between the sulfur in the egg white and the iron in the yolk. This reaction, which produces iron sulfide, is typically caused by overcooking or allowing the eggs to remain in hot water for too long after the heat is turned off.

To achieve perfect soft-boiled eggs with firm whites and creamy yolks, chef Cyril Lignac recommends using eggs at room temperature rather than straight from the refrigerator to avoid thermal shock. The suggested method is to cook them in boiling water for exactly six minutes, followed by an immediate plunge into ice water to stop the cooking process.
