Egg preparation tips for better texture and peeling
Culinary experts provide guidance on avoiding common mistakes when preparing eggs, specifically regarding scrambled and boiled varieties.
To achieve creamy scrambled eggs, it is recommended to use medium-low heat and avoid overcooking. Adding a single tablespoon of milk or cream per four eggs can enhance texture, but excessive liquid may cause unevenness. The eggs should be removed from the heat while still slightly soft, as residual heat will finish the cooking process.
For boiled eggs, experts suggest using an ice bath immediately after cooking to stop the residual heat. This prevents the yolk from becoming dry or developing a grey-green ring caused by a chemical reaction between sulfur and iron. Cooling eggs in ice water also helps the egg white separate from the membrane, making them significantly easier to peel and better for slicing.
