Food experts recommend storing eggs in the refrigerator to ensure maximum freshness and safety. While eggs are often left on kitchen countertops, the refrigerator provides the stable, low temperatures necessary to slow the growth of bacteria such as salmonella. Because eggshells are not completely airtight, temperature fluctuations can cause condensation on the shell, which may facilitate bacterial penetration.
