Eggs and Frozen Foods: Scientific Insights on Proper Storage
Eggs have a natural protective layer called the cuticle that blocks bacteria and retains moisture. Refrigeration can damage this layer, especially when eggs are stored in the door where temperature swings are greatest, leading to faster quality loss and odor absorption. In Belgium, the Netherlands and many other European countries, unwashed eggs are typically kept at room temperature, preserving the cuticle. The United States, however, requires commercial eggs to be washed and disinfected, removing the cuticle; consequently, refrigeration is necessary to prevent Salmonella.
Deep‑freezing food at –10 °C or lower halts bacterial activity, making frozen products microbiologically safe indefinitely. Quality changes such as texture, color, or flavor may occur over long periods, and thawing should be done quickly or kept cold to avoid temperature abuse. The appearance of “best‑before” dates on frozen goods reflects expected quality rather than safety. Both practices underline that proper temperature control, rather than storage duration alone, determines food safety and quality.
