Supermarkets often display eggs on ordinary shelves rather than in refrigerated cases. The ambient temperature in stores is usually lower and more stable than a typical home kitchen, which slows spoilage. Rapid product turnover and the brief time eggs spend on shelves also help keep them safe for consumption.
Storing eggs at room temperature is considered safe, but experts recommend keeping them refrigerated at home, ideally between 2 °C and 8 °C, to preserve freshness, quality and reduce bacterial growth. Retailers avoid full‑time refrigeration because of the cost of installing, operating and maintaining cooling equipment, and because refrigeration space is limited for items that truly require low temperatures.
Consumers are advised to check the freshness date and inspect shells for cracks before purchase, and to place eggs in the refrigerator promptly after bringing them home, especially in warmer months.
