El Salsa restaurant returns to Cardigan for 10‑day pop‑up during National Eisteddfod
Award‑winning Mexican street‑food venue El Salsa is reopening its original premises in Pwllhai, Cardigan for a limited ten‑day pop‑up that runs until 8 August. The restaurant, founded in 2018 by former Cardigan Secondary School pupil Laura Elsaesser after expanding her catering‑van business, closed in September 2022 but kept a presence through kitchen takeovers and pop‑ups.
The revival coincides with the National Eisteddfod being held nearby, prompting the team to offer tacos, burritos, loaded nachos, fajita chicken wraps, fruit slushies, frozen margaritas and a selection of beers. El Salsa will serve food from 4 p.m. to 9 p.m. and operate a bar from 4 p.m. each day, aiming to attract locals, visitors and festival‑goers.
