Emilian tortellini history reveals diverse traditional serving methods

Historical research into the culinary traditions of the Emilia region suggests that the serving methods for tortellini are more complex than modern perceptions suggest. While many consider tortellini in broth to be the only authentic version, historical records indicate a variety of preparation styles used over the centuries.

Documents dating back to the 17th century mention tortellini in broth, but evidence shows that until the early 19th century, the pasta was frequently served dry, seasoned with butter and cheese. Some medieval traditions from the 11th century suggest similar stuffed pastas were cooked in broth, yet during the Renaissance, it was common to serve stuffed pastas with spices, fats, and sauces rather than as a liquid-based dish.

The debate between serving tortellini with cream versus broth is not merely a matter of taste but a historical discussion involving fragmented documentation. While broth is a deeply rooted tradition, the idea that it was the sole original method is challenged by the historical prevalence of dry preparations.
