Ernst Knam highlights labor crisis after kitchen staff mass resignation

Renowned pastry chef Ernst Knam has highlighted the labor challenges facing the Italian restaurant industry following the mass resignation of his entire kitchen brigade in July. Knam reported that he was left with only one long-term collaborator, Manuel, after the rest of his staff departed simultaneously.

Knam attributed the sudden exodus to the influence of a single “bad apple” who allegedly “infected” the rest of the group. He expressed frustration regarding the lack of protections for entrepreneurs in Italy, stating that business owners often feel isolated and have limited control over staff decisions.

The incident has sparked a broader discussion regarding the generational shift in work culture. While the traditional model of the industry often relies on total sacrifice and long hours, a newer generation of professionals is increasingly prioritizing work-life balance and personal time. Following the departures, Knam conducted twelve interviews and hired seven new pastry chefs to resume operations in September.
