Fermented cabbage benefits and proper pickling techniques

Fermented cabbage offers various nutritional benefits, including fiber, vitamins C, K, B6, and folic acid. The fermentation process involves lactic acid bacteria that can provide probiotic properties, aiding digestion and satiety. While these vegetables contain antioxidants and potassium, they are not a medical treatment for cancer or blood pressure issues.

Nutritional considerations include high sodium levels, which may require moderation for individuals following medical salt restrictions. For successful fermentation and texture, using coarse non-iodized salt is recommended to prevent soft vegetables or cloudy brine. Maintaining a salt concentration of 30–40 grams per liter of water and ensuring vegetables are fully submerged in brine are essential for preservation. Adding horseradish can further help maintain crunchiness.
